  • ½ cup granulated sugar

  • 1 cup sour cream
  • ¼ cup fresh lemon juice
  • Zest of 1 lemon
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of a 9-inch springform pan.
  3. Bake for about 10 minutes until golden brown; allow to cool completely.
  4. In another bowl, beat cream cheese and granulated sugar until smooth. Add vanilla, eggs (one at a time), sour cream, lemon juice, zest, and baking powder; mix until combined.
  5. Pour filling into cooled crust and smooth the top.
  6. Bake for 50-60 minutes until set but slightly jiggly in the center.
  7. Cool at room temperature for an hour before refrigerating for at least four hours or overnight.
  8. Serve garnished with fresh berries or whipped cream.
