  • 2 lbs ground beef
  • 1 1/2 cups panko bread crumbs
  • 1 large onion (finely diced)
  • 8 cloves garlic (crushed)
  • 2 tbsp gochujang
  • 3 tbsp apricot jam
  • 2 large eggs (lightly beaten)
  • 5 green onions (minced)
  • 2 tsp kosher salt
  • 2 tsp vegetable oil
  • 1 tbsp rice apple vinegar
  • 1 tbsp honey
  • 2 tsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp granulated garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a pan with vegetable oil, sauté diced onions until translucent, about 10 minutes. Add crushed garlic and cook for another 2 minutes; let cool.
  3. In a mixing bowl, combine the cooled onion mixture with minced green onions, gochujang, eggs, and kosher salt.
  4. In a large bowl, mix ground beef and panko breadcrumbs gently with the gochujang mixture.
  5. Transfer the mixture into a loaf pan or shape it on a baking sheet.
  6. Bake in the oven until the internal temperature reaches 140°F (about 40 minutes).
  7. While baking, mix glaze ingredients in a bowl.
  8. Apply glaze after reaching initial temperature and return to oven until it reaches 160°F (additional 10-15 minutes).
  9. Allow resting before slicing and serve hot.
