  • 1 lb flank steak
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 2 cups cooked rice (white or brown)
  • 1 cup kimchi
  • 1 cup cucumber, thinly sliced
  • 1 avocado, sliced
  • Green onions, chopped for garnish

Instructions

  1. In a medium bowl, mix soy sauce, sesame oil, brown sugar, garlic, ginger, and rice vinegar. Whisk until combined.
  2. Place the flank steak in a resealable bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 30 minutes up to 4 hours.
  3. Cook rice according to package instructions.
  4. Heat a grill pan over medium-high heat. Remove steak from marinade and discard leftover marinade. Grill steak for about 4-5 minutes per side or until desired doneness.
  5. Let the steak rest for a few minutes before slicing against the grain into thin strips.
  6. Assemble bowls by starting with rice as the base followed by sliced steak, kimchi, cucumber, avocado, and green onions on top.
