  • 3/4 cup Swerve Granular
  • 1 large egg
  • 1 large egg yolk
  • 1 1/2 tsp vanilla extract
  • 2 3/4 cups almond flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp sugar-free sprinkles
  • 8 ounces softened cream cheese
  • ⅓ cup powdered Swerve Sweetener
  • ½ teaspoon vanilla extract
  • 2 tablespoons heavy whipping cream

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×9 inch baking pan with parchment paper.
  2. In a mixing bowl, cream together softened butter and Swerve until smooth. Add an egg, egg yolk, and vanilla; mix well.
  3. Gradually incorporate almond flour, baking powder, and salt into the mixture.
  4. Spread the crust mixture evenly in the prepared pan and bake for about 15 minutes until lightly golden.
  5. For the cheesecake filling, beat cream cheese until smooth, then blend in powdered Swerve, followed by an egg, vanilla extract, and heavy whipping cream.
