  • 1 teaspoon lemon juice
  • 1 tablespoon erythritol
  • 1/2 cup water
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup erythritol
  • 4 eggs (separated)
  • 1 tablespoon vanilla extract
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup water
  • 1 cup mascarpone cheese
  • 1 cup cream (whipping)
  • 2 tablespoons erythritol (ground)
  • 1 tablespoon vanilla extract
  • 2 cups strawberries (sliced)

Instructions

  1. In a mixing bowl, combine chopped strawberries, lemon juice, erythritol, and water. Set aside.
  2. Cream softened butter and erythritol until fluffy. Add egg yolks one at a time, then stir in vanilla.
  3. In another bowl, whisk coconut flour, baking powder, and salt. Gradually mix into the butter mixture along with water until smooth.
  4. Beat egg whites until stiff peaks form and gently fold into the batter.
  5. Pour batter into a greased baking dish and bake at 350°F (175°C) for about 25 minutes or until golden brown. Let cool.
  6. In a bowl, blend mascarpone cheese with whipping cream and ground erythritol until soft peaks form.
  7. Cut the cooled cake into layers or cubes; layer with strawberry mixture and cream mixture in serving glasses.
  8. Refrigerate for at least an hour before serving.
