  • 3 large bell peppers
  • 1 pound lean ground beef
  • 1 cup keto tomato sauce
  • 1 cup ricotta cheese
  • 1.5 cups shredded mozzarella cheese (divided)
  • 1 tsp olive oil
  • 1/4 tsp fennel seeds
  • 1/4 cup Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a skillet over medium heat, heat olive oil with fennel seeds; add ground beef and cook until browned. Drain excess fat.
  4. Stir in the keto tomato sauce, then mix in ricotta and half of the mozzarella.
  5. Stuff each pepper with the beef mixture and place upright in a baking dish.
  6. Top with remaining mozzarella and Parmesan cheese.
  7. Cover with foil and bake for 30 minutes, then uncover for an additional 10 minutes until cheese is bubbly.
