  • 12 oz fresh raspberries
  • 2 large fresh mangoes, cubed
  • 1 lb fresh strawberries, cubed
  • 1 lb green grapes, halved
  • 1 lb red grapes, halved
  • 4 cups apple juice
  • 4 packets unflavored vegan gelatin
  • 3 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Prepare your bundt pan by lightly spraying it with pan spray and wiping it down with a paper towel.
  2. In a medium bowl, combine 1 cup of apple juice with the vegan gelatin; set aside. Boil the remaining juice with sugar and lemon juice, then mix into the bowl until dissolved. Allow to cool.
  3. Layer the fruits in the bundt pan: start with raspberries, then mangoes, strawberries, green grapes, and finally red grapes.
  4. Pour the cooled gelatin mixture over the fruits until fully covered. Refrigerate for 3-4 hours to set.
  5. To serve, briefly place the bundt pan in hot water before inverting onto a serving plate.
