  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 1/4 tsp instant yeast
  • 1 1/4 cups cold whole milk (or almond milk)
  • 1 cup unsalted butter
  • 16 chocolate batons (or 8 oz semi-sweet/dark chocolate)
  • 1 large egg (optional for egg wash)
  • 1 tbsp milk (or non-dairy milk)

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and yeast. Gradually add cold milk while mixing until dough forms; knead gently until smooth.
  2. Flatten cold butter between parchment paper into a rectangle and chill with the dough for 30 minutes.
  3. Roll out chilled dough, place butter in the center, fold over it, roll out again, and fold like a letter; repeat this two more times with chilling in between.
  4. Roll out final dough into a large rectangle and cut triangles. Place chocolate batons near the base of each triangle and roll tightly.
  5. Arrange on a baking sheet lined with parchment paper. Optionally brush with egg wash. Let them rise until doubled before baking at 400°F (200°C) for about 20 minutes until golden brown.
