2 cups whole milk (or non-dairy milk)
0.5 cups granulated sugar (or coconut sugar)
0.25 cups cornstarch
4 egg yolks
1 teaspoon vanilla extract
2 tablespoons unsalted butter (or vegan butter)
1 cup heavy cream (or coconut cream)
8 ounces semi-sweet chocolate
Instructions
Prepare the custard by heating milk and sugar in a saucepan until dissolved. Whisk cornstarch with egg yolks in a separate bowl, then temper the yolks with the warm milk mixture before cooking until thickened. Stir in vanilla and butter; cool.
Preheat the oven as per croissant dough package directions and roll out the dough on a floured surface.
Fill each triangle of dough with cooled custard and roll tightly into crescent shapes.
Bake on a parchment-lined baking sheet until golden brown.
For ganache, heat cream until simmering, remove from heat, add chocolate, and stir until smooth.
