  • 1/4 cup whole milk (warm)
  • 2 tablespoons sugar
  • 1 teaspoon active dry yeast
  • 1 teaspoon salt

Instructions

  1. Begin by mixing flour, sugar, salt, and yeast in a large bowl. Gradually add warm milk until a shaggy dough forms.
  2. Knead the dough on a floured surface until smooth.
  3. Flatten the cold butter between parchment sheets into a rectangle and chill until firm.
  4. Roll out the dough into a rectangle and place the chilled butter on one half; fold over to encase it.
  5. Roll out again and fold into thirds; repeat twice more to laminate the dough.
  6. Cut triangles from the rolled-out dough, then roll each triangle from base to tip to shape croissants.
  7. Proof the shaped croissants on lined trays until doubled in size (about 1 hour), then preheat your oven to 400°F (200°C).
  8. Bake for 15-20 minutes until golden brown.
