  • 2 large sweet potatoes
  • 1 cup fresh or frozen cranberries
  • 1 juicy apple, diced
  • 2 tablespoons plant-based butter
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 2 tablespoons maple syrup
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pierce sweet potatoes with a fork and place on a baking sheet. Bake for 45-50 minutes until soft.
  3. Let cool slightly, then prepare filling: melt butter in a skillet over medium heat, add diced apple, cranberries, nutmeg, cinnamon, and salt. Cook for 5-7 minutes until tender.
  4. Stir in maple syrup; cook an additional two minutes.
  5. Slice each baked sweet potato in half lengthwise and scoop out most of the flesh into a mixing bowl.
  6. Mash the sweet potato flesh and mix with half of the cranberry apple filling.
  7. Spoon this mixture back into each potato skin and top with remaining filling.
  8. Return to the baking sheet and bake for another 10-12 minutes until heated through.
