Warm up your holidays with these delightful Hot Chocolate Cookies! Infused with the cozy flavors of hot cocoa and stuffed with gooey vegan marshmallows, these chewy treats are perfect for sharing at festive gatherings or enjoying on a chilly afternoon.

  • 10 Tablespoons unsalted butter (softened to room temperature)
  • 1/2 cup light brown sugar (packed)
  • 3/4 cup granulated sugar (divided)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 ounce packet of hot chocolate mix
  • 3 Tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 120 mini vegan marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  2. In a mixing bowl, beat together softened butter, light brown sugar, and half of the granulated sugar until fluffy. Add the egg and vanilla extract; mix well.
  3. Combine dry ingredients: flour, hot chocolate mix, cocoa powder, baking soda, and kosher salt. Mix until just combined.
  4. Use a cookie scoop to portion the dough into balls. Flatten each ball slightly and place 5-6 mini vegan marshmallows in the center. Wrap the dough around the marshmallows and roll into smooth balls, then coat in remaining granulated sugar.
  5. Bake for 10-12 minutes until cracks form on top and some marshmallows peek through. Let cool on wire racks for 15 minutes before serving.
