  • 1 lb ground turkey (or chicken)
  • 2 ribs celery (diced small)
  • 1 yellow onion (diced small)
  • 2 large carrots (diced small)
  • 1 medium zucchini (diced small)
  • 1 Yukon gold potato (peeled and diced into 1/2-inch cubes)
  • 1 cup trimmed green beans (diced)
  • 1 can (15 oz) red kidney beans (drained and rinsed)
  • 1 can (15 oz) white beans (drained and rinsed)
  • 1 can (28 oz) fire roasted diced tomatoes
  • 5 cups chicken broth
  • Salt, black pepper, chili flakes, garlic, bay leaves

Instructions

  1. In a large pot over medium heat, add ground turkey and crumble it while cooking until browned. Remove from pot and set aside.
  2. In the same pot, sauté celery, onion, carrots, salt, pepper, and optional chili flakes for about 8-10 minutes until softened.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Add the cooked turkey back to the pot along with zucchini, potato, green beans, both beans, diced tomatoes, chicken broth, and bay leaves. Mix well.
  5. Bring to a gentle boil over medium heat; then reduce to low and simmer covered for 30-45 minutes until potatoes are tender.
  6. Stir in uncooked pasta; continue simmering for an additional 7-10 minutes or until pasta is al dente.
  7. Remove bay leaves before serving hot.
