  • 3/4 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 1 cup cottage cheese
  • 1/3 cup unsweetened plain Greek yogurt
  • 2 tbsp cream cheese
  • 2 tbsp sugar-free maple syrup
  • 1 egg
  • 1/4 tsp baking powder
  • 1 scoop PEScience Strawberry Cheesecake Protein Powder
  • 3/4 cup frozen strawberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a blender or food processor, crush graham cracker crumbs and mix with melted butter. Press into the bottom of each muffin liner.
  3. Blend cottage cheese, Greek yogurt, cream cheese, maple syrup, egg, baking powder, and protein powder until smooth.
  4. Pour the cheesecake mixture over the crusts in the muffin tin.
  5. Bake for 38-41 minutes until set but slightly soft in the center.
  6. While baking, heat frozen strawberries in a saucepan until they break down into a sauce. Remove from heat.
  7. Cool the cheesecake bites completely before topping with strawberry sauce and refrigerate overnight.
