  • 1/2 cup unsalted butter, room temperature
  • 1/4 cup sugar
  • 1 cup flour
  • pinch of salt
  • 1 tsp vanilla bean paste
  • 1/2 cup fresh squeezed lemon juice
  • 1 Tbsp dried hibiscus or hibiscus tea
  • 3 large eggs
  • 1 1/2 cups sugar
  • 1/2 cup flour
  • Confectioner's sugar (for serving)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream together room temperature unsalted butter, sugar, and vanilla bean paste in a stand mixer.
  3. Add flour and salt; mix until just combined. Press into a lightly floured 9×9 baking pan and chill for 15 minutes.
  4. Bake crust for 15 minutes until lightly browned; cool slightly.
  5. Infuse dried hibiscus in fresh lemon juice for 15 minutes, then strain solids out.
  6. Whisk eggs and sugar together; blend in strained lemon juice and remaining flour.
  7. Pour filling over cooled crust and bake for 20-25 minutes until set.
  8. Cool completely before slicing; dust with confectioner’s sugar before serving.
