  • 2 tablespoons avocado oil
  • 1.5 lbs boneless, skinless chicken breasts
  • 1 small red onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 small head broccoli
  • 20 oz can pineapple chunks
  • ¼ cup pineapple juice (reserved from the can)
  • ¼ cup rice apple vinegar
  • ⅓ cup soy sauce or tamari
  • 1.5 teaspoons sesame oil
  • 2 tablespoons arrowroot powder or cornstarch

Instructions

  1. Heat 1 tablespoon of avocado oil in a large pan or wok over medium-high heat.
  2. Add diced chicken and cook until browned and cooked through. Remove from the pan.
  3. In the same pan, add remaining oil and stir-fry diced onion, bell peppers, and broccoli until tender-crisp.
  4. Whisk together pineapple juice, rice apple vinegar, soy sauce or tamari, sesame oil, and arrowroot powder in a bowl.
  5. Return chicken and pineapple chunks to the pan; pour the sauce over everything and stir well until thickened.
  6. Serve hot over cooked rice and garnish with sesame seeds.
