  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 onion (sliced)
  • 3 cloves garlic (minced)
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sriracha sauce
  • 1 tablespoon olive oil
  • 1 teaspoon fresh ginger (grated)
  • Salt and pepper to taste
  • 2 cups jasmine rice
  • 4 cups water
  • Fresh cilantro (for garnish)

Instructions

  1. Cook jasmine rice by bringing water to a boil in a medium saucepan, adding rice, then simmering covered for about 15 minutes.
  2. In a large skillet or wok, heat olive oil over medium-high heat. Season chicken with salt and pepper, then cook until browned and fully cooked (6-8 minutes). Set aside.
  3. In the same skillet, sauté garlic and ginger until fragrant (about 1 minute).
  4. Add sliced onions and bell peppers; cook until tender-crisp (4-5 minutes).
  5. Mix soy sauce, honey, and sriracha in a bowl; pour over veggies.
  6. Return chicken to the skillet along with pineapple chunks; toss well to coat and heat through (2-3 minutes).
  7. Serve hot over jasmine rice, garnished with fresh cilantro.
