  • 20 oz can pineapple rings + ¾ cup juice

  • 1 tbsp sesame oil
  • 2 cloves garlic (minced)
  • 1 tbsp fresh ginger (minced)
  • 3 tbsp brown sugar
  • â…“ cup ketchup
  • 2 tsp tomato paste
  • ½ tsp red pepper flakes
  • ½ tsp ground nutmeg
  • ¼ tsp chili powder
  • 3 tbsp chopped fresh cilantro (for garnish)
  • 3 green onions (chopped for garnish)
  • Long grain white rice
  • Avocado slices

Instructions

  1. In a mixing bowl, combine pineapple juice, soy sauce, sesame oil, minced garlic, minced ginger, brown sugar, ketchup, tomato paste, red pepper flakes, nutmeg, and chili powder.
  2. Add chicken thighs to the marinade and coat well. Let marinate for at least 15 minutes.
  3. Preheat grill to medium-high or oven to 400°F (200°C).
  4. Grill chicken for about 6-8 minutes per side until cooked through or bake on parchment-lined sheet for about 20-25 minutes.
