  • 1 lb ground beef
  • 2 cups green beans
  • 1 cup diced onion
  • 1 cup mushrooms
  • 3 tsp minced garlic
  • 1/4 cup chicken broth
  • 1/3 cup sour cream
  • 2 Tbsp cream cheese
  • 2 cups shredded Colby jack cheese
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1/8 tsp dried thyme

Instructions

  1. In a cast-iron skillet, brown the ground beef over medium heat for about 5 minutes. Drain excess grease, leaving a tablespoon in the pan.
  2. Sauté diced onions in the same skillet until softened (about 3 minutes). Add mushrooms and cook for an additional 2 minutes.
  3. Stir in green beans, minced garlic, and chicken broth. Cook until green beans are tender (2-3 minutes).
  4. Reduce heat to medium-low; mix in cream cheese and sour cream until combined.
  5. Return ground beef to the skillet along with seasonings and stir well.
  6. Top with shredded Colby jack cheese.
  7. Broil for about 2 minutes or cover and heat on low until cheese melts.
