  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup raspberry or strawberry jam
  • 1 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
  • Red food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In one bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix the eggs, vegetable oil, buttermilk, and vanilla extract until combined.
  4. Gradually add the wet ingredients to the dry ingredients while stirring until just blended.
  5. Fill each cupcake liner with batter and bake for 18–20 minutes until a toothpick comes out clean.
  6. Heat the jam in a saucepan until liquid; set aside to cool slightly.
  7. Once cooled, core each cupcake and fill with the warm jam.
  8. For frosting, beat softened butter until creamy; gradually mix in powdered sugar, heavy cream, vanilla extract, and red food coloring until smooth.
  9. Frost each filled cupcake and garnish with fresh raspberries.
