  • 68 firm onions
  • 2 pounds ground beef
  • 1 cup Arborio rice
  • 2 cups pureed tomatoes
  • 23 tablespoons olive oil
  • 1 onion, finely chopped
  • 56 garlic cloves, grated
  • 1 and 1/2 teaspoons salt or to taste
  • freshly cracked black pepper
  • 1/3 cup finely chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried mint
  • 1 teaspoon dried dill
  • 2 cups onion broth
  • 34 tablespoons Balsamic vinegar (substitute with additional vinegar if needed)
  • parsley for garnish

Instructions

  1. Prepare the onions by cutting off the tops and bottoms, peeling them, and boiling in salted water for 10-15 minutes until softened. Reserve onion broth.
  2. In a skillet, heat olive oil and sauté finely chopped onion until softened. Add grated garlic and ground beef; season with salt and pepper until cooked through.
  3. Stir in tomato puree and rice with reserved broth; cook until most liquid is absorbed. Mix in fresh herbs.
  4. Stuff each onion layer with the filling and arrange them seam-side down in a baking pan.
  5. Prepare the sauce by mixing pureed tomatoes with balsamic vinegar, salt, and pepper; pour over stuffed onions.
  6. Cover and bake at 400°F (200°C) for 45 minutes; uncover for an additional 35-45 minutes until tender.
  7. Let cool slightly before serving; garnish with parsley.
