  • 1 kg / 2 lb Baking Potatoes, peeled & diced into large bite-sized pieces
  • 1 liter / 4 cups Chicken Stock
  • 23 Lemons, (2 for boiling, 1 is optional to serve)
  • 1 Chicken Oxo Cube, (sub 1 tsp Chicken Bouillon)
  • 3 tbsp Olive Oil
  • 2 tsp Dried Oregano
  • 1/4 tsp EACH: Salt & Black Pepper
  • 1 small bulb of Garlic, cloves left in skins and lightly smashed with the side of a knife
  • 1 tbsp finely diced Fresh Parsley
  • 200g / 7 oz Feta Cheese, roughly broken into large chunks
  • 100g / 3.5 oz Cream Cheese
  • 2 tbsp Olive Oil
  • 1 tsp Honey

Instructions

  1. Add the potatoes to a large pot and pour in the chicken stock until just covered. Squeeze in the juice of 2 lemons and crumble in the Oxo cube. Stir well, then bring to a boil over high heat. Cook until the potatoes are knife-tender.
  2. Drain the potatoes and leave them to steam dry for about 10 minutes or until they completely stop steaming. This step ensures they get crispy in the oven. Preheat your oven to 390F/200C.
  3. Transfer the dried potatoes to a large baking tray. Toss them with olive oil, oregano, salt, pepper, and garlic. Roast in the oven for about 40-45 minutes or until they are deep golden brown and crispy, tossing occasionally.
  4. In a food processor, combine feta cheese, cream cheese, olive oil, and honey. Blitz until smooth and creamy. Stop occasionally to scrape down the sides for an even consistency.
  5. Spread the whipped feta in a large shallow dish and top it with roasted potatoes. Garnish with fresh parsley and an optional squeeze of lemon juice before serving. Enjoy!
