  • 42g unsalted butter, cubed
  • 5g fresh thyme, chopped
  • Black pepper to taste

Instructions

  1. In a wide pot, bring the chicken broth and salt to a boil.
  2. Add cauliflower florets; reduce heat to low, cover, and steam for 20 minutes until fork-tender.
  3. Using a slotted spoon, transfer steamed cauliflower to a food processor.
  4. In the same pot, whisk cubed butter into about 3 tablespoons of hot broth until smooth.
  5. Pour the butter mixture over the cauliflower in the processor; add chopped thyme and black pepper.
  6. Blend until completely smooth, adjusting texture with additional warm broth if needed.
  7. Serve warm as an exquisite side dish.
