  • 600 g rib-eye steak
  • 300 g cremini mushrooms
  • 1 medium onion
  • 1 Tbsp Dijon mustard
  • 150 ml full-fat sour cream
  • 500 ml low-salt beef broth
  • 2 Tbsp butter
  • 2 Tbsp neutral oil
  • Egg noodles or tagliatelle for serving

Instructions

  1. Pound the rib-eye steak to about ¾ cm thick, slice into strips, and season with salt and pepper.
  2. In a skillet, heat 1 tablespoon of oil and sear half of the beef strips for about 30 seconds on each side; transfer to a plate. Repeat with remaining beef.
  3. Lower heat, melt butter, add sliced onions, cooking until softened. Add mushrooms and cook until golden brown.
  4. Sprinkle flour over vegetables; stir continuously for about 1 minute.
  5. Deglaze pan with half a cup of beef broth while scraping any browned bits. Gradually add remaining broth and mustard; simmer for about 5 minutes.
  6. Remove from heat, stir in sour cream until silky; return beef to skillet to warm through.
  7. Serve stroganoff over cooked egg noodles or tagliatelle; garnish with chopped chives.
