  • 3 cups vegetable broth
  • 7 oz vegan sour cream
  • 7 oz vegan cream cheese
  • 6 oz vegan chicken cubes
  • 2 ribs celery, chopped
  • 1/4 cup shredded carrots
  • Handful of spinach
  • 2 Tbsp olive oil
  • 3 cloves garlic, diced
  • 1/3 cup onions, finely chopped
  • 1 tsp Italian herbs
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large saucepan, heat olive oil over medium heat. Add diced celery, garlic, and onions. Sauté for about 2 minutes until fragrant.
  2. Stir in the vegan chicken cubes and season with salt and pepper. Cook for an additional 3 minutes until the chicken begins to brown.
  3. Pour in the vegetable broth and bring it to a boil. Add the gnocchi; cook until they float to the top (about 2-3 minutes).
  4. Mix in the vegan cream cheese, sour cream, shredded carrots, Italian herbs, and spinach. Cook for another 2 minutes until everything is heated through.
