  • 1 1/4 cups lukewarm water
  • 2 1/4 teaspoons quick-acting yeast
  • 1 tablespoon honey (or sugar)
  • 3/4 cup brown rice flour
  • 3/4 cup white rice flour
  • 1 cup potato starch
  • 1 cup tapioca flour
  • 1 teaspoon xanthan gum
  • 1 teaspoon baking powder (gluten free)
  • 1 teaspoon salt
  • 1/4 cup olive oil (or softened butter)
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon psyllium husk (whole/ or 1 egg for non-vegan)
  • 6 cups water (for boiling)
  • 1/2 cup baking soda
  • Dairy-free margarine
  • Kosher salt
  • Honey (optional)

Instructions

  1. In a bowl, combine lukewarm water and yeast; let it sit until bubbly (about 5 minutes).
  2. In a stand mixer, mix the dry ingredients: brown rice flour, white rice flour, potato starch, tapioca flour, xanthan gum, baking powder, and salt.
  3. Add the activated yeast mixture along with olive oil. Mix for 1-2 minutes until combined.
  4. Allow the dough to rise in a greased bowl for about an hour.
  5. Preheat oven to 450°F and boil water with baking soda in a large pot.
  6. Shape the dough into bite-sized pieces and boil each batch for 1–1.5 minutes.
  7. Brush boiled bites with olive oil or dairy-free butter, sprinkle with kosher salt, then bake for about 15 minutes until golden.
