  • 1 tbsp instant yeast
  • 2 tbsp sugar
  • 1/2 cup cashew milk (or non-dairy milk)
  • 2 tbsp coconut oil
  • 2 cups Bob's Red Mill gluten-free 1-to-1 flour
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup cornstarch

Instructions

  1. Warm the cashew milk and coconut oil together for about 1 minute in the microwave.
  2. In a mixing bowl, combine the yeast and sugar; add the warmed milk mixture and let it proof until bubbly (about 3 minutes).
  3. Mix gluten-free flour and salt in another bowl.
  4. Add eggs to the yeast mixture, whisking until blended; fold in the flour mixture until a slightly sticky dough forms.
  5. Dust your surface with cornstarch and roll out dough to about 1/2 inch thick.
  6. Cut into strips, twist them into shape, then place on a tray to rise for an hour.
  7. Heat oil in a fry pan to 350°F – 375°F.
  8. Fry doughnuts until golden brown on each side (about 1 minute), then drain on paper towels.
  9. Coat warm doughnuts in cinnamon-sugar.
