  • 1/4 teaspoon baking soda
  • 2 tablespoons packed light brown sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon apple cider vinegar
  • 4 tablespoons unsalted butter, softened
  • 1 egg, beaten
  • 1 1/4 cups warm milk
  • 4 tablespoons unsalted butter, softened (for filling)
  • 3/4 cup packed light brown sugar (for filling)
  • 1 teaspoon ground cinnamon (for filling)
  • 1 cup confectioners' sugar (for glaze)
  • 1 tablespoon milk (for glaze)
  • 6 tablespoons unsalted butter, softened (for glaze)
  • 2 cups confectioners' sugar (for glaze)
  • 3 tablespoons heavy whipping cream (for glaze)

Instructions

  1. Grease a 9-inch x 13-inch casserole dish and set aside.
  2. In a mixing bowl, whisk together gluten-free flour blend, xanthan gum (if needed), tapioca starch, dry milk powder, instant yeast, cream of tartar, baking soda, light brown sugar, and kosher salt until well combined.
  3. In another bowl, combine warm milk with apple cider vinegar; add softened unsalted butter and beaten egg until smooth.
  4. Pour the wet ingredients into the dry mix and stir until a soft dough forms. Adjust with more flour or milk if needed.
  5. Roll out on a floured surface to about ½ inch thick and spread softened butter over it.
  6. Sprinkle with ground cinnamon and light brown sugar; roll tightly into a log shape and cut into equal pieces.
  7. Place in the greased dish, cover, and let rise for about an hour until doubled in size.
  8. Preheat oven to 350°F (175°C) and bake for approximately 20 minutes until golden brown.
  9. While rolls bake, whisk together confectioners' sugar and milk until smooth, then stir in softened butter until fully combined. Gradually add heavy whipping cream until desired consistency is reached.
