  • 2 teaspoons ground cinnamon
  • 2 apples, peeled and finely diced
  • 2 eggs or 6 tablespoons aquafaba (for vegan option)
  • Powdered sugar for glazing

Instructions

  1. In a large mixing bowl, whisk together the gluten-free flour, xanthan gum (if needed), baking powder, cinnamon, and salt until combined.
  2. Stir in the milk, oil, eggs (or aquafaba), and vanilla extract until smooth.
  3. Fold in the diced apples until evenly incorporated.
  4. Heat oil in a skillet to 360°F – 375°F (180°C – 190°C).
  5. Drop spoonfuls of batter into the hot oil and fry until golden brown on both sides.
