  • 1/3 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar (packed)
  • 1 cup apple cider
  • 1/3 cup water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking powder, salt, granulated sugar, cinnamon, and ginger.
  3. In a separate large bowl, mix applesauce, milk, vegetable oil, molasses, and vanilla until smooth.
  4. Fold dry ingredients into wet ingredients until just combined.
  5. Pour batter into an 8×11-inch baking dish. Sprinkle with the topping mixture of brown sugar and additional cinnamon.
  6. Pour apple cider and water over the top—do not stir!
  7. Bake for approximately 40 minutes or until the center is set.
  8. Allow to cool for about 5–10 minutes before serving.
