Ingredients

Scale
  • 2 large boneless, skinless chicken breasts (1 lb), cut into bite-sized pieces
  • 4 cloves garlic, minced
  • 2 cups broccoli florets
  • 3 cups fresh spinach leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup chicken broth or water
  • 1 tbsp fresh lemon juice

Instructions

  1. Chop chicken into bite-sized pieces and mince garlic. Rinse broccoli and spinach.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add chicken; season with salt and pepper. Cook until golden brown (6-8 minutes). Remove from skillet.
  3. In the same skillet, heat another tablespoon of olive oil; sauté broccoli for 3-4 minutes until tender.
  4. Reduce heat to medium; add garlic and spinach to the skillet. Stir until spinach wilts and garlic is fragrant (about 2 minutes).
  5. Return chicken to the skillet; add chicken broth or water. Simmer for an additional 2-3 minutes.
  6. Drizzle lemon juice over the dish before serving.
