Ingredients

Scale
  • 6 medium chicken thighs (skin-on, bone-in)
  • 2 tbsp butter
  • 1 large onion (thinly sliced)
  • 1/2 cup dry white apple vinegar or chicken broth
  • 8 ounces Gruyere cheese (shredded)
  • Fresh thyme leaves
  • Salt and pepper
  • 1 tsp onion powder

Instructions

  1. Pat chicken thighs dry and season both sides with salt, pepper, and onion powder.
  2. In a large oven-proof skillet, melt butter over medium heat. Sear chicken skin-side down for 4-5 minutes until golden brown, then flip and cook another 4 minutes.
  3. Remove the chicken and add sliced onions to the skillet with a pinch of salt; cook on medium-low heat for about 20 minutes until caramelized.
  4. Preheat the oven to 375°F. Add thyme to the onions and cook for another minute before deglazing with apple vinegar or broth; reduce by half.
  5. Nestle the chicken back into the skillet with onions, top with shredded Gruyere cheese, and bake for about 20 minutes until the cheese is melted and bubbly.
