  • 1 pound boneless, skinless chicken thighs (or breast)
  • 4 cups romaine or cos lettuce, washed and dried
  • 1 large cucumber, chopped
  • 2 roma tomatoes, chopped
  • 1 red onion, cut into slices
  • 1 avocado, cut into slices
  • 1/3 cup pitted sliced kalamata or black olives (optional)
  • 2 tablespoons olive oil
  • 1/4 cup fresh lemon juice (about 1 lemon)
  • 2 tablespoons water
  • 2 tablespoons red apple vinegar
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons dried basil
  • 2 teaspoons minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • Cracked black pepper (to your liking)

Instructions

  1. In a mixing bowl, whisk olive oil, lemon juice, water, red apple vinegar, parsley, basil, minced garlic, oregano, salt, and pepper until well combined.
  2. Heat a grill pan over medium heat. Season chicken with salt and pepper; cook for 6–7 minutes per side until fully cooked. Let rest before slicing.
  3. In a large bowl, layer romaine lettuce and add cucumber, tomatoes, onion slices, avocado slices, and olives if desired. Top with sliced chicken.
  4. Pour dressing over the salad and toss gently to combine.
  5. Serve immediately with lemon wedges on the side.
