  • 1 1/2 pounds strawberries (680g), quartered or sliced
  • 1/3 cup granulated sugar (67g)
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons cornstarch (16g)
  • 1/2 teaspoon vanilla extract
  • Pinch of kosher salt

Instructions

  1. Prepare the strawberries by slicing or dicing them; set aside one-third of the strawberries.
  2. In a saucepan, combine two-thirds of the strawberries with the sugar.
  3. In a small bowl, mix lemon juice, cornstarch, vanilla extract, and salt until smooth. Add to the strawberry mixture.
  4. Heat over medium until boiling; stir for about 4-5 minutes until thickened.
  5. Remove from heat and mix in the remaining strawberries.
  6. Cool before transferring to an airtight container; refrigerate.
