  • 2 servings dry instant ramen noodle cakes (or other noodles)
  • 1 cup water or vegetable broth
  • 57 tbsp soy sauce
  • 23 tbsp corn starch
  • 13 tbsp sugar (maple syrup or other liquid sweetener)
  • 2 tbsp rice vinegar
  • Optional toppings: extra firm tofu, sliced veggies, chopped scallions, sesame seeds

Instructions

  1. Prepare the sauce by mixing all sauce ingredients in a bowl until well combined. Set aside.
  2. Boil water in a pot and cook the noodles for about 2-3 minutes less than package instructions until chewy.
  3. Drain the noodles and optionally rinse under cold water.
  4. In a non-stick skillet, sauté chosen veggies and tofu over medium-high heat until cooked to preference.
  5. Pour the prepared sauce into the skillet and let it simmer for 2-3 minutes until thickened.
  6. Add cooked noodles to the skillet, stirring well to coat with sauce.
  7. Cook everything together for an additional 3 minutes. Adjust seasoning if necessary.
  8. Garnish with sesame seeds and scallions before serving.
