  • 4 cups vegetable broth
  • 1 cup small pasta (like ditalini)
  • 2 cups baby spinach

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion and minced garlic until fragrant (about 3 minutes).
  2. Add chopped carrots and celery; cook for another 5 minutes until slightly softened.
  3. Stir in chopped zucchini, green beans, diced tomatoes, and drained cannellini beans. Season with oregano, basil, salt, and pepper.
