  • 1 cup pineapple chunks (fresh or canned)

  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground ginger
  • 1 cup long-grain white rice
  • 2 cups water

Instructions

  1. Rinse the rice under cold water until the water runs clear. Combine it with water in a saucepan and bring to a boil over medium heat.
  2. Once boiling, reduce heat to low, cover, and simmer for 15–18 minutes until tender. Set aside when done.
  3. Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook for about 5–7 minutes until lightly golden and cooked through. Remove excess oil if necessary.
  4. Add chopped onion to the skillet and cook for 2–3 minutes until softened. Stir in minced garlic and cook for an additional 30 seconds until fragrant.
  5. Add pineapple chunks, soy sauce, honey, black pepper, and ground ginger to the skillet. Stir well to coat the chicken evenly and simmer on low heat for about 5–7 minutes until the sauce thickens slightly.
