  • 1 medium white onion, diced
  • 3 medium celery ribs, diced
  • 4 medium carrots, diced
  • 3 medium zucchini, diced
  • 1 tablespoon minced garlic
  • 1 (28 ounce) can diced tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can white cannellini beans
  • 1 (15 ounce) can kidney beans
  • 6 cups vegetable broth
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 8 ounces elbow macaroni or shell pasta
  • 1 cup baby spinach

Instructions

  1. In a large soup pot, heat salted butter and olive oil over medium heat.
  2. Sauté the diced onion for about 3 to 5 minutes until softened.
  3. Add chopped celery, carrots, and zucchini; cook for another 8 to 10 minutes. Stir in minced garlic and cook for an additional minute.
  4. Combine the diced tomatoes (with juice), tomato sauce, both types of beans (drained), vegetable broth, basil, and oregano. Bring to a boil.
  5. Once boiling, add pasta and reduce heat to medium-low; cook for about 10 to 12 minutes until pasta is tender.
  6. Stir in chopped spinach during the last two minutes of cooking until wilted.
  7. Adjust seasoning with salt and pepper as desired before serving hot.
