  • 1 3/4 cups almond flour
  • 1 tablespoon baking powder
  • 2 large eggs

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. In a microwave-safe bowl, combine shredded cheese and cream cheese. Microwave in 20-second intervals until mostly melted; whisk until smooth and let it cool slightly.
  3. Transfer the warm cheese mixture to a food processor, add dry ingredients and eggs; pulse until a thick dough forms.
  4. On a lightly floured surface, knead the dough gently, divide into six portions, shape into balls, and flatten them on the baking tray. Brush tops with egg wash and sprinkle sesame seeds if desired.
