  • ¼ cup granulated sugar
  • 1 tbsp lemon zest (grated on a Microplane)
  • 1 tsp vanilla extract
  • 1 cup gluten-free all-purpose flour
  • ⅛ tsp kosher salt
  • 3 eggs, at room temperature
  • 1 cup granulated sugar
  • ½ cup lemon juice (freshly squeezed)
  • 1 tbsp lemon zest (grated on a Microplane)
  • ½ cup gluten-free all-purpose flour
  • ⅛ tsp kosher salt
  • Powdered sugar for garnish

Instructions

  1. Preheat your oven to 350°F and prepare an 8×8-inch baking dish with parchment paper.
  2. For the crust, beat together softened butter, granulated sugar, lemon zest, and vanilla until fluffy. Mix in gluten-free flour and salt, then press into the baking dish. Poke holes with a fork and bake for 20 minutes until golden.
  3. For the filling, whisk eggs, sugar, lemon juice, lemon zest, flour, and salt until smooth. Pour over the cooled crust and bake for another 20–30 minutes until set.
  4. Allow to cool completely before slicing into bars and dusting with powdered sugar.
