  • ⅓ cup (65g) granulated sugar
  • 2 ¼ teaspoons instant yeast (1 packet)
  • 2 teaspoons salt
  • 1 teaspoon baking powder
  • 1 ¼ cup (295ml) water (warm)
  • 1 cup (236ml) whole milk (warm)
  • 2 large eggs
  • 6 tablespoons (85g) butter (melted)
  • 1 cup (200g) brown sugar
  • 2 tablespoons cinnamon
  • 8 tablespoons (113g) butter (melted)
  • 8 ounces (226g) cream cheese (softened)
  • 4 tablespoons (56g) butter (softened)
  • 1 ⅓ cup (160g) powdered sugar
  • 2 teaspoons vanilla extract
  • 3 cups (340g) powdered sugar
  • 1/3½ cup milk
  • 2 teaspoons vanilla extract
  • pinch of salt

Instructions

  1. In a mixing bowl or stand mixer, combine warm water, warm milk, granulated sugar, and instant yeast. Let sit for about 5-10 minutes until bubbly.
  2. Add melted butter and eggs to the mixture; mix well until combined.
  3. Gradually add gluten-free bread flour, baking powder, and salt into the wet mixture. Mix on low speed until a soft dough forms.
  4. Cover the bowl with a clean towel or plastic wrap.
  5. Let the dough rise in a warm place for about 1 hour until it doubles in size.
  6. In a separate bowl, mix together brown sugar and cinnamon.
  7. Roll out the risen dough onto a floured surface into a rectangle about ½ inch thick.
  8. Brush melted butter over the dough and sprinkle evenly with the brown sugar-cinnamon mixture.
  9. Starting from one edge of the rectangle, carefully roll up the dough tightly into a log shape.
  10. Slice into 12 equal pieces.
  11. Preheat your oven to 350°F (175°C).
  12. Place sliced rolls on a parchment-lined baking sheet and let them rise again for about 30 minutes.
  13. Bake for approximately 25-30 minutes or until golden brown.
  14. While rolls are baking, prepare the cream cheese frosting by combining softened cream cheese, softened butter, powdered sugar, and vanilla extract in a bowl until smooth.
  15. Once baked rolls have cooled slightly, spread cream cheese frosting on top before serving!
