  • 1 cup Long-Grain White Rice
  • 2 cups Chicken Broth
  • 1 cup Bell Peppers
  • 1 cup Zucchini
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 tablespoon Olive Oil
  • 1 teaspoon Paprika
  • Salt to taste
  • Pepper to taste
  • Fresh Parsley or Cilantro (for garnish)

Instructions

  1. Prepare the vegetables by washing and chopping them into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken and cook until browned on both sides (about 5-6 minutes per side). Remove from skillet.
  3. In the same skillet, add chopped onion and minced garlic. Sauté until translucent. Then add bell peppers and zucchini, cooking for another 4-5 minutes.
  4. Stir in rice and pour in chicken broth. Bring to a boil.
  5. Return the cooked chicken to the skillet. Season with paprika, salt, and pepper. Cover and reduce heat to low; simmer for about 20 minutes until rice is tender.
  6. Fluff the rice before serving and garnish with fresh parsley or cilantro.
