  • 1 bell pepper (diced)
  • 2 cloves garlic (minced)
  • 2 lb ground beef
  • 4 tbsp keto taco seasoning
  • 2 tbsp tomato paste
  • 2 medium eggs
  • 1½ cups shredded cheese
  • ½ cup heavy whipping cream
  • Optional: jalapeno slices

Instructions

  1. Preheat your oven to 180°C/350°F. In a large skillet over high heat, sauté diced onions, bell pepper, minced garlic, and ground beef until the meat is browned.
  2. Mix in the keto taco seasoning and tomato paste until well combined. Spread the mixture evenly in a casserole pan.
  3. In a mixing bowl, whisk together the eggs, heavy whipping cream, and half of the shredded cheese. Pour this mixture over the beef layer in the casserole pan.
