  • 1/2 cup small uncooked tapioca pearls
  • 1/2 cup sweetened condensed milk (or condensed coconut milk for dairy-free)
  • 13.5 fl oz full-fat coconut milk (room temperature)

Instructions

  1. In a medium pot, bring 5 cups of water to a boil. Add tapioca pearls and cook for 10 minutes, stirring occasionally.
  2. Turn off heat, cover, and let pearls soak for another 10-15 minutes until translucent.
  3. Strain cooked tapioca in a fine mesh sieve and rinse under cold water until cool.
  4. Mix drained tapioca with room temperature coconut milk.
  5. Blend 17.6 oz of strawberries with sweetened condensed milk until smooth.
  6. Combine strawberry mixture with tapioca and taste; adjust sweetness if desired.
