  • 1 bell pepper, chopped
  • 1 (20 oz) can pineapple chunks, drained (reserve juice)
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch
  • 1 cup chicken broth
  • 2 cups cooked rice
  • Optional: chopped green onions for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces and cook until browned and cooked through. Remove from skillet.
