  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons vegetable oil
  • 1 cup pineapple juice
  • 1 cup pineapple chunks
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • Green onions for garnish

Instructions

  1. Pat chicken dry and season with salt and pepper. Toss with cornstarch until evenly coated.
  2. Heat vegetable oil in a large nonstick skillet over medium-high heat. Cook chicken in batches until golden brown and cooked through (5–7 minutes). Remove and set aside.
  3. In a bowl, whisk together pineapple juice, brown sugar, soy sauce, rice vinegar, garlic, and ginger.
  4. Pour the sauce into the skillet, simmering gently. Whisk in cornstarch slurry until thickened (about 2–3 minutes).
  5. Add chicken and pineapple chunks back into the pan, stirring to coat well (about 2 minutes).
  6. Garnish with sliced green onions and serve over steamed rice or noodles.
