  • 2 teaspoons instant yeast
  • 1 cup cold whole milk
  • 1 cup unsalted butter (for lamination)
  • 8 ounces chocolate batons or semi-sweet chocolate
  • 1 large egg (for glaze)
  • 1 tablespoon milk (for glaze)

Instructions

  1. In a large bowl, combine flour, sugar, salt, and yeast. Gradually mix in cold milk until a dough forms. Knead for about 5 minutes until smooth.
  2. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Prepare the butter block by pounding cold unsalted butter between parchment sheets into a rectangle; refrigerate until firm.
  4. Roll out chilled dough into a rectangle and enclose the butter block inside. Roll again and fold like a letter; chill for another 30 minutes.
  5. Roll out once more, cut triangles, place chocolate at the base, and roll up tightly.
  6. Preheat oven to 400°F (200°C). Brush croissants with an egg-milk wash and bake for about 20 minutes until golden brown.
