  • ¾ cup quick oats
  • 1 cup white whole wheat flour
  • 1 cup grated carrots (about 2 medium)
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt

Instructions

  1. Grate the carrots and squeeze out excess moisture using cheesecloth or a kitchen towel.
  2. Preheat your oven to 350°F and grease a 9 x 5 inch loaf pan.
  3. In a large bowl, whisk together the egg, applesauce, mashed bananas, maple syrup, and vanilla extract until smooth.
  4. Stir in quick oats, baking soda, cinnamon, ginger, nutmeg, and salt until combined.
