  • 4 tablespoons coconut oil
  • 1 onion, finely diced
  • 5 garlic cloves, minced

  • 1/2 cup tomato paste
  • Spices: garam masala, turmeric, coriander

Instructions

  1. In a large bowl, combine marinade ingredients: coconut milk, lemon juice, garlic, ginger, and spices.
  2. Add chicken pieces to the marinade, ensuring they are fully coated. Marinate for at least 30 minutes (up to 24 hours).
  3. Heat coconut oil in a skillet over medium-high heat; cook chicken in batches until browned (about 3 minutes per side). Set aside.
  4. In the same skillet, sauté onions until translucent. Add garlic, ginger, and chili pepper; cook until fragrant.
  5. Stir in tomato paste and spices; cook briefly.
  6. Add water and seasonings; simmer for about 15 minutes until thickened.
  7. Blend sauce until smooth; return to heat and mix in remaining coconut milk and chicken. Simmer for another 10 minutes.
