  • 1 cup strawberries, hulled and sliced
  • 1 large English cucumber, thinly sliced
  • 2 tbsp chopped fresh mint or basil
  • 2 tbsp slivered almonds, sunflower seeds, or walnuts (toasted, optional)
  • 1 tbsp fresh lemon juice or balsamic vinegar
  • 1 tsp honey or maple syrup
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Wash and dry strawberries and cucumbers. Hull and slice strawberries; thinly slice cucumbers.
  2. Whisk together lemon juice, honey (or maple syrup), olive oil, salt, and pepper in a small bowl until combined.
  3. In a large bowl, combine cucumbers, strawberries, fresh herbs, and cheese if using.
  4. Drizzle half the dressing over the salad mix and gently toss until coated.
  5. Transfer to a serving platter; top with nuts/seeds and any remaining dressing before serving.
